I am not aware of Maha-Devi and the associated stories with Her. But I 
will try to say something about Parvati.

1. Paarvatee is the re-incarnation of Sati. The word Sati has its roots
   in Sat. So, Sati (and consequently Parvati) is supposed to represent
   Truth and purity, since sat is a Samskrit root, implying truth.

2. The word Paarvatee implies the one born of a mountain. Mountains, by
   their very nature are fixed and stron. So, one trait of Parvati is that 
   She has very strong characteristics. Her devotion to her Siva, is 
   absolute and very catholic. It is beyond question. In the folklore
   associated with Parvati (which is from Madhya Pradesh state of India)
   there is a song, in which two people ask each other question. One
   person asks the other (who plays the role of Parvati) as to why She
   wants to marry Siva, (who has no clothes, is poor and a mendicant,
   and has all the un-romantic characteristics). And the other person,
   (who poses as Parvati) says that no matter what happens, it is Her
   destiny to be united with Siva. The entire song is a very long one,
   where several lures are laid in front of Parvati, and the latter
   refuses them steadfastedly. This, IMO is the central character of
   Parvati. Absolute One-ness with Her Husband. On a parallel basis,
   Siva is also united with Parvati in an absolute sense. 

3. The stories also say, that Parvati in her earlier life was also
   married to Siva. That tells us in one more way that the concept
   of Hindu marriage transcends the present life.
