Hinduism beleives in one God, with several incarnations on
earth. I think the reason for so many different names of God
is historical. Hinduism accepts many interpretations of the
basic philosophical concepts. Therefore whereas Christianity
(for example) rejected and suppressed/converted what it
considered Paganism, Hinduism accepted them as yet more ways
to reach the same goal.
This is my interpretation. Others may have different opinions.

There is no one answer. There is mythology (some would say
history) behind each. Study of these would explain. I am sure
there are philosophical interpretations to each too.
My detailed study of Hinduism is limited to the Baghvad Gita
because that one book explains everything of importance in
Hinduism, ie., the fundamental Hindu philosophy. In my
opinion everything else is detail.

"Self defence" is the correct term. The reasons
are again tied up in mythology/history. There is a story
behind each.
