Cremation symbolizes the belief that the jivatma has
relenquished whatever material connection or bonds
it had to the material world. For normal people the level of spirituality
is lower than that of the sanyasi and hence burnt because it represents
attachment and desire to the physical material world.
Sanyasis are buried because they are supposed to have mastered their senses
even in the human form in the present birth. The jivatma for these people
leaves the body thru the skull (kabala moksha). These people are not buried
because having attained self realization even in their present birth in their
human form, their bodies are the epitomy of purity and the equivalent of a
temple.
