vegetarism

Warm greetings to all,

I am attempting to study Ayurveda for health and longevity.
I find it disconcerting that the diet to balance kapha, vata,
and pitta includes animals.
Were the ancient rishis not vegetarians?
Is the book I am currently reading, "Ayurveda, The science of self-healing"
by Dr. Vasant Lad, a westernized version of the Ayrvedic diet?
In what cases are Hindus not vegetarian?

Thank you in advance.
