Kevin here is my 2 pennies worth..

both of you I guess she too is about your age .. so .. it would
be safe to say that ..
both of you are mature adults .. and both of you seem to know
what you want out of your relationship ..

Its very difficult to figure out a way to share your feelings with your
parents .. especially if its a girl .. because usually a girl is taught
to not speak her mind with the parents ... etc ..

I am also aware that the religion may not matter to you .. but its not
you.. that you two have to think about .. Think about the future you two
will bring into this world .. will you raise them as a hindu or a 
catholic?

Think about all these factors and then see where you want to take this
relationship

on the other hand to answer your questions ..
1)  You may for sure get married in a Hindu temple because
	no matter what religion you belong to the temples will
	welcome you.  As a matter of fact I have seen a few weddings
	in Chicago (inter racial).

2)  Ceremony can be arranged to your liking .. this you need to talk
	to the priest who will perform the wedding.

3)  Hiding place?  I suggest that you two act like mature adults and
	tell your parents.  Falling in love is not a crime .. but
	the situation changes if the girl feels that she is not the one
	to decide .. if that is the case then you have to approach the
	parents and ask for their permission ...
