Dear Christina
Although I do not consider myself an expert on Ayurveda, let me
try to answer your questions from my limited knowledge.
1) Rishis were not vegetarians. In Hinduism there is no mention
of vegetarianism being better than non vegetarianism. In fact it was
Buddha and Mahavir who preached against killing innocent animals and as
Buddhism and Jainism spread around India, hindus followed Jains and
became vegetarians. Therefore Gujarat and Rajasthan are the main states
where vegetarianism is practiced even today because it has the greatest
number of Jains in India.
2) Most books written by people are modern adaptations of the
Ayurveda practice. If you need the real ancient text on Ayurveda, look
for a translation of Sushrut's "Ayurveda".
