Beef should be avoided because cows give mankind milk. Therefore, they 
are considered to be one of man's seven natural mothers, the others 
being the biological mother, the nurse, the wife of the brahmana, wife 
of the spiritual master, wife of the King, and Mother Earth. 

It is indeed contemptible to slaughter an animal and consume its flesh 
for sense gratification. But it is even more contemptible to do this 
to the cow, which so kindly provides us with the saatvik beverage of 
milk which nourishes us and develops brain tissue.
